Cooking, baking, recipes, etc...

So I have decided I want to try to make one new recipe a week. I started a few weeks ago with ZUPPA TUSCANO
And this week I made Enchilada Meatloaf and also Egg rolls. Here are the recipes. Oh and I RARELY follow a recipe exactly (which is why I like cooking better than baking) so I will list my variations below each recipe and/or beside each ingredient.

Enchilada Meatloaf

1 egg, lightly beaten
1 medium onion finely chopped I had no onion I used onion powder
1/4 jar of salsa I just dumped until it looked right
2 Tbs chili powder Again didnt measure, just dumped and smelled LOL
3 Cloves of garlic minced I used garlic powder
1/2 tsp of salt I did not measure
1 lb of ground beef
1 8.5 oz pkg cornbread mix
2 oz sharp cheddar cheese

Preheat Oven to 350. In a large bowl combine egg, onion, salsa, chili powder, garlic, and salt. Add ground beef - mix well. Shape into a ball and place in a 3" pie plate. Flatten meat to create a 6" circle.
Prepare corn bread mix according to pkg directions. Spread batter on top of meatloaf. Bake about 50 minutes (internal temp 160F) Remove from oven  sprinkle with cheese - bake 10 minutes more. Serve with additional salsa and/or sour cream.
 I doubled this recipe. And I added meat to the bowl then all of the ingredients. I added shredded cheese to the meat mixture instead of on top the "pie". I used a 13x9 dish. And I also had to cook for about 80 minutes

This was soooooooo good! I will be making it again!   

Easy Egg Rolls

2 Tbs vegetable oil
1/2 lb of ground beef I used 1 lb.
3 cloves of garlic minced I used 4
1/2 medium onion minced I only had a little bit of onion so I used that and some onion powder
2 green onions finely chopped I replaced this with chives since they are growing in my garden
5 cups cabbage coleslaw blend I just used a whole package i think it was like 7 cups
1/2 tsp powdered ginger I did not have so I did
1 Tbs soy sauce I just guessed - I used prob closer to 2
salt & pepper
1 pkg egg roll wrappers These can be found in the refrigerated section of the produce section
water/beaten egg 


Heat oil in a skillet. Add minced onion and garlic. Cook until tender (about 5 minutes) Add pork saute until browned. This is when I added my salt, pepper, and additional onion powder (they add it at the end) I wanted the pork flavored. Add coleslaw blend and stir fry on high heat about 5 minutes. Remove from heat add seasoning, salt, pepper, and soy sauce I only added soy sauce at this point 
To assemble place 2 tbs near edge of egg roll wraper. Wet opposite end and sides with water or beaten egg. Fol over each side only 1/4" and roll. Deep fry at 350 & drain on paper towels.

I read this variation once. Brush with olive oil or butter and bake at 350 until crunchy. I think I would do that next time. I would also omit the oil for frying and just use a non stick skillet. These were kind of greasy.

These were VERY good. everyone loved them!  

I guess I will have to see how many weeks I can try a new recipe. But I will let you know when I do!
